Finca Patio Bonito
This coffee comes from Finca Patio Bonito in Caldono, Cauca, Colombia, produced by Carlos Arturo Trujillo and his daughter Paola Trujillo. Grown at around 1700 MASL, this is a washed Java variety harvested between May and August, selected as a focused Variety Select lot to highlight the flavour potential of a single cultivar.
This Java was harvested at peak ripeness. Put through a demucilage machine, then placed into bioreactors along with brix-adjusted and cultured mosto from Gesha & Java cherries. Fermented until 3.5ph is reached, then washed. It’s the placed in a mechanical drier until the desired moisture content is reached.
We tasted lemongrass, galangal, and delicate lime notes, giving the coffee a soft, lifted profile with a refined and elegant finish.
Patio Bonito is a family-run farm built on nearly 50 years of dedication to coffee. Carlos works alongside his daughter Paola, who returned to the farm after years as a cupper and buyer, bringing new insight into processing and quality control. Their work is grounded in soil conservation, sustainability, and a long-term vision for both the farm and future generations.
