This coffee comes from Finca La Pacaya in Juayúa, Sonsonate, El Salvador, produced by Miguel Angel Villavicencio of MAVcoffee. Grown between 1750-2000 MASL in the Apaneca-Ilamatepec mountain range, this is a natural processed Geisha and a Cup of Excellence winning lot.
La Pacaya was established as a dedicated garden for cultivating and exploring rare and prestigious coffee varieties, with the site chosen specifically to allow these varieties to express themselves fully. The Geisha planted here traces back to the T.2722 lineage, originally sourced from Boquete, Panama, where the variety first gained international recognition.
Cherries were selectively harvested at peak ripeness, with only fruit measuring 25° Brix accepted. After harvest, the cherries were sieved for size uniformity, floated to remove defects, and shade dried on raised beds until reaching a final moisture content of 10.5%. The careful selection and controlled drying allow the natural process to remain expressive while maintaining clarity and balance.
In the cup, we tasted ripe tropical fruits, bright stonefruit, and delicate acidity, finishing clean and refined.
Finca La Pacaya has consistently stood out at the Cup of Excellence, with its Geisha placing multiple times over recent years and taking 1st place in 2025. This lot reflects MAVcoffee’s long-term commitment to precision, terroir selection, and variety-driven quality at the highest level.
