Julio Palli
This coffee comes from Finca San Bartolomé in Caranavi, Bolivia, produced by Julio Palli Mamani and Lupe Medina. Grown between 1,500-1,670 MASL, this is a washed Catuai & Caturra processed with a 42-hour sealed fermentation, sourced through Melbourne Coffee Merchants.
The cherries were selectively hand-picked and delivered to Agricafe’s Buena Vista washing station in Caranavi. On arrival, each lot was inspected and sorted by weight using water before being disinfected and pulped. The coffee was then transferred to sealed stainless steel tanks, where it fermented for 42 hours with no oxygen exposure. Keeping the tanks closed throughout fermentation allowed aromatic compounds to remain trapped, building structure and intensity while maintaining clarity.
After fermentation, the parchment was washed with fresh water and carefully dried for approximately 120 hours in a mechanical guardiola, a horizontal rotating drum that ensures consistent airflow and controlled moisture reduction. Once fully dried, the coffee was rested before being milled at La Luna dry mill in La Paz, where it underwent both mechanical and meticulous hand sorting for maximum precision.
We tasted plum, cherry, and nougat sweetness, creating a floral and vibrant cup with excellent structure and a clean, composed finish.
Julio and Lupe have farmed San Bartolomé for over 25 years. Through their involvement in the Sol de la Mañana program, they have transformed their five-hectare farm from a traditional smallholding into a highly organised, quality-focused operation. What was once simply a means of income has become a genuine passion for Julio. A shift reflected in the care and attention behind this lot.
