Javier Quintero
This coffee comes from producer Javier Quintero at his farm Buena Vista in Inzá, Cauca, Colombia. Grown at 1600-1700 MASL in volcanic ash soils, this rare Bourbon Aruzi variety was first discovered in Cauca when an unusual coffee tree was found with distinct characteristics, later confirmed by genetic analysis to be closely related to Ethiopian Bourbon Aruzi.
The cherries are harvested at peak ripeness, floated and hand-sorted, then undergo 30 hours of underwater fermentation before being pulped. The parchment is gently washed and dried under temperature-controlled conditions until optimal moisture content is achieved.
We tasted butter cookie, lemon and gardenia.
All our coffees are sold as whole beans.
