This coffee was produced by Abel Giron at Finca Los Botijas in Comayagua, Honduras. A third-generation coffee farmer, Abel cultivates several varieties on his farm including Pacamara, Typica and Gesha. After placing in the 2022 Cup of Excellence with his Pacamara, he has continued refining his quality-focused approach, and we’re incredibly grateful to be working with this beautiful washed Gesha.

Cherries for this lot were harvested at peak ripeness and floated to remove low-density fruit and defects before being pulped. The coffee underwent a traditional dry fermentation in concrete tanks for 10-14 hours, allowing the mucilage to break down in a controlled environment while preserving aromatics and clarity. Following fermentation, the parchment was thoroughly washed in concrete channels to remove remaining mucilage.

Drying took place slowly on raised beds until the coffee reached a stable moisture content of 10-12%. Careful bed management and gradual moisture reduction ensured the delicate Gesha aromatics were preserved, resulting in a clean, transparent cup profile that speaks clearly to both variety and place.

In the cup we find jasmine pearls, flat peach and raw sugar sweetness. It’s intensely floral and elegant, with juicy stone fruit acidity and a soft, rounded sweetness that carries through to a refined, composed finish.

Abel’s work at Las Botijas reflects a generational dedication to coffee in Comayagua balancing tradition with steady refinement. His attention to detail in harvesting and processing allows this Gesha to express its full potential with clarity, structure and vibrancy.
