Faustino Flores
This coffee was produced by Faustino Flores at Finca El Morito in San Ignacio, Cajamarca, Peru. Faustino is the patriarch of the Flores family and the founder of Finca El Morito, a farm and community that has placed multiple times in the Cup of Excellence, most recently in 2022. From his plot comes this fully washed Gesha grown at 1,850 MASL, a variety Faustino has only recently begun exploring after decades of refining his craft.
Cherries were selectively harvested at 20 Brix or higher, with a second sort to remove overripe fruit. The cherries were fermented in hermetically sealed tanks for 24 hours before being pulped. A second fermentation followed for 48 hours with the remaining mucilage, completing 76 hours of total fermentation time. The coffee was then washed and dried in a solar dryer under shade for 20 to 25 days, with roasting and cupping carried out at the El Morito lab in Jaen to confirm the profile.
In the cup we find orange blossom, clementine and elderflower. Delicate and lifted on the open, with bright citrus and a floral elegance that carries all the way through. Clean, refined and unmistakably Geisha.
Faustino has been farming coffee since the 1970s, rooted in the Cajamarca region long before the family relocated to San Ignacio in 2009 to establish what would become Finca El Morito. He is known for his exceptional Caturra Amarillo, but in recent years his curiosity has drawn him toward new varieties. The Geisha and Marshell plantings on his farm are the result of that same restless dedication to the craft that has defined his career. This lot is a glimpse of where that curiosity is taking him.
