This coffee comes from Finca La Pacaya in Juayúa, Sonsonate, El Salvador, produced by Miguel Angel Villavicencio of MAVcoffee. Grown between 1750-2000 MASL in the Apaneca-Ilamatepec mountain range, this is a natural processed Gesha, the same lot that placed 1st in El Salvador COE last year.
Cherries were selectively harvested at peak ripeness, with only fruit measuring 25° Brix accepted. After harvest, the cherries were sieved for size uniformity, floated to remove defects. The cherries were then dried, before being sealed in custom fermenters and fermented Anaerobically for 48 hours. Shade dried in a greenhouse, at a specific 30ºc, until reaching a final moisture content of 10.5%.
This is our second season purchasing this lot from MAVcoffee, and we find its even more to our preference this year. An extremely well integrated fruit forward Natural Processed coffee. This one has an abundance of florals, Lilac, Rose, ripe & fruity, but distinctly pastel vibed. Blending into dried Strawberry and Rose Hip tea, the acidity is fresh and juicy. This is an exceptional coffee that we are super hype to have on board.
Finca La Pacaya is an award winning farm and the crown jewel in the MAVcoffee family. It was established as an exotic varietal farm, where no expense nor variable would be left out in search of the highest quality coffee we can produce.
The farm has won three consecutive times at El Salvador's Cup of Excellence and a presidential award.
