This Pink Bourbon lot was sourced from Tierra Diversidad, which is a group of 117 smallholder producers throughout Palestina, Huila, Colombia. Processed at Finca Betania by Lino Rodriguez, in El Silencio located about 1800masl.
The processing info I received from Lino - Cherries are manually harvested at peak ripeness, before being floated to remove debris and any underripe cherries. Held-in-cherry for 24 hours before depulping, the pulped coffee is fermented underwater for 36-48 hours depending on the temperature. Cold temps would be held longer, warmer temps would use a shorter ferment. The coffee is then thoroughly washed in cement channels before being transferred to patios to dry for 20 - 24 days. The parchment is then stored in grain-pro to stabilise for 15 days.
This is a vibrant Washed lot, for fans of classic expressions of Pink Bourbon. We're finding floral Hibiscus, with extremely juicy Blood Orange, cranberry, and citrus. Lemon Zest and black tea balance out this loud coffee.
From Cata -
“Tierra Diversidad is part of a thriving network of 117 smallholder producers in southern Huila, a region internationally recognized for its exceptional terroir and long-standing dedication to quality. These producers work under a shared philosophy: farming with respect for the land, preserving traditional methods, and avoiding chemical practices that compromise soil health and biodiversity.
The group has invested in shared infrastructure — including a cupping laboratory, professional drying stations, and centralized warehouses — allowing each producer to elevate quality while maintaining full traceability at every stage. At the heart of this community stands Linarco Rodríguez, affectionately known as “Don Lino.” He embodies both leadership and humility, combining deep agricultural knowledge with a constant drive for improvement.
Over the years, Don Lino has introduced advances in selective harvesting, fermentation control, and drying techniques, raising quality standards not only on his farm but across the entire region. His commitment extends beyond production: he mentors young growers, promotes environmentally responsible practices, and actively supports initiatives that strengthen the local community. Every lot associated with Tierra Diversidad carries this spirit of collaboration, care, and long-term vision.”
